Seafood Pontchartrain (Horizon)

Ingredients:


  • 2 tbsp diced onions
  • 2 chopped baby portabella mushroom buttons
  • 1/2 diced red pepper
  • 1/2 diced green pepper
  • 2 tbsp diced garlic
  • butter
  • olive oil
  • 1 cup white wine
  • 1 1/2 cup heavy whipping cream
  • salt
  • white pepper
  • angel hair pasta

Seafood

  • 6 shrimp
  • 6 scallops
  • 2 tbsp crab meat
  • 2 tbsp crawfish

Sauce Seasoning

  • 1 tbsp thyme
  • 1 tbsp white pepper
  • 1 tbsp cayenne
  • 1 tbsp black pepper
  • 5 tbsp paprika


Directions:


In a large sauce pan, combine garlic and onions with butter and olive oil. Let sizzle and add shrimp, scallops, peppers, mushrooms, salt and pepper. Sauté for 3 minutes. Add mixed sauce seasoning. Eyeball for color (usually 3-5 shakes). Mix thoroughly.

Add white wine and let it cook down for 5 minutes on medium heat. Towards the end, add crab, crawfish, and heavy whipping cream. Mix well. Add more sauce seasoning if you want it spicier. Put the heat on low and let it simmer while stirring around the edges until it is reduced to the proper thickness. Serve with angel hair pasta.
