Microwave Caramel Corn

Microwave Caramel Corn

 Prep Time: 20 minutes
 Cook Time: 5 minutes
 Servings: 8-10 servings


Ingredients:


  • 1 cup brown sugar
  • 1 stick margarine/butter
  • 3-4 quarts popped corn
  • 1/4 cup white syrup
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 cup peanuts (optional)
  • Large brown paper grocery bag


Directions:


Combine sugar, butter, syrup and salt in 2 quart glass dish or bowl. Microwave on HIGH 2 minutes. Stir. Continue to microwave uncovered to boiling. Boil 3 minutes. Remove from oven and add baking soda, stiring to blend. Put popcorn in brown grocery bag. Pour caramel mixture over popped corn, close bag and shake well. Add peanuts, if desired, and shake again. Place loosely closed bag in microwave. Heat on HIGH 1 1/2 minutes. Shake bag. Heat again on HIGH another 1 1/2 minutes. Shake. Cook 45 seconds and shake again. Cook 30 seconds and shake. Spread on waxed paper to cool.
