Meat Pies

 Servings: 16 pies


  • 1 pound roll hot sausage, or 1 pound sausage and 1/2 pound ground beef
  • 1 medium onion, finely diced
  • 1/2 medium red bell pepper, finely diced
  • 2 cloves garlic, minced
  • 1 small Louisiana yam, or sweet potato peeled and grated
  • 1 tsp fresh basil, chopped
  • 1 T "Slap-your-Mama" or 1/4 tsp cayenne
  • 1/4 tsp cracked black pepper
  • 1/4 tsp white pepper
  • 2 tsp worcestershire sauce
  • 1/4 cup flour
  • 3 sheets puff pastry, 9X9 inches, from the grocery freezer section
  • 1 egg beaten with 1 T of water for egg wash


Cook vegetables and garlic in 1 T butter until they are clear. Grate in sweet potato and cook until vegetables turn golden brown. Add meat and cook until browned. Add all the other spices. Stir 1/4 cup of flour and remove from heat to cool. Once the meat mixture is cool, roll out puff pastry to 1/8th inch and cut 4" circles, 4 per sheet. Brush edge of pies with egg wash and divide the meat (a heaping serving spoon for each). Fold dough in half and seal edge close with fingers or fork. Brush tops of all the pies with egg wash and bake at 375 for 30-35 minutes until golden brown.
