 Servings: 12-15 servings

  • 1 dozen medium eggs
  • 1 tbsp. mustard
  • 1 tbsp. sweet pickle juice
  • 2 -3 tbsps. mayonnaise
  • 1/2 tsp. salt
  • paprika to garnish

Boil eggs for 10 minutes. Drain and rinse in cold water. Allow eggs to set in cold water for 5 minutes before removing the shells. Rinse eggs to be sure all parts of the shell are removed and pat dry. Slice each egg in 1/2 long-way and remove yolk into a small bowl. With fork, smash yolks. Add mustard, pickle juice, mayo and salt and mix until smooth. Adjust to taste. Fill eggs with yolk mixture and sprinkle with paprika to serve. Eggs are best when refrigerated at least 30 minutes.
