Delores' Potato Salad

Delores' Potato Salad

  • 6 cups peeled and diced potatoes
  • 6 hard cooked eggs
  • 2 tbsp. minced onions
  • 1 1/2 cups mayonnaise
  • 1/2 cup mustard
  • 2 tbsp. sugar
  • 1 tbsp. vinegar
  • 2 tbsp. pickle relish
  • salt and pepper to taste


Quarter potatoes and boil in saucepan until tender. Drain and chop. Add chopped eggs. Mix mayo, mustard, onion, sugar, vinegar and pickle relish in separate bowl. Pour over potatoes and eggs and mix well. Cover and refrigerate for at least an hour until chilled.
