- 2 lbs. ground beef
- 1 lb. brick chili
- 1 can Rotel tomatoes
- 2 cups chili beans
- 1 lb. Velvetta cheese (cut into chunks)
- 1/2 pint cream or half and half
- Doritos or Fritos
- Taco toppings - lettuce, tomatoes, sauce, sour cream, etc.
Brown ground beef and drain. Add the brick chili (canned chili without beans can substitute), Rotel and chili beans. Let the mixture simmer at least 5 minutes. Add the Velvetta and cream. Stir until cheese melts. Serve over slightly crushed Doritos or Fritos and top with lettuce, tomatoes, sauce or dressing and sour cream.
