Creamy Tacos

  • 2 lbs. ground beef
  • 1 lb. brick chili
  • 1 can Rotel tomatoes
  • 2 cups chili beans
  • 1 lb. Velvetta cheese (cut into chunks)
  • 1/2 pint cream or half and half
  • Doritos or Fritos
  • Taco toppings - lettuce, tomatoes, sauce, sour cream, etc.


Brown ground beef and drain. Add the brick chili (canned chili without beans can substitute), Rotel and chili beans. Let the mixture simmer at least 5 minutes. Add the Velvetta and cream. Stir until cheese melts. Serve over slightly crushed Doritos or Fritos and top with lettuce, tomatoes, sauce or dressing and sour cream.
