Cherry Cheesecake

 Servings: 12 servings


  • 2 cups graham cracker crumbs
  • 1/2 cup butter
  • 1/4 cup sugar
  • 2 - 8 ounce pkgs cream cheese, softened
  • 1 14 ounce can sweetened condensed milk
  • 1/2 cup lemon juice
  • 2 tsp vanilla extract
  • 1 can instant cherry pie filling


Crust: Combine graham cracker crumbs, butter and sugar in a medium bowl with a fork. Press evenly on bottom and up the sides a bit of a 13 X 9 baking dish. Bake 10 minutes at 350°. Set aside to cool.

Filling: With mixer, beat cream cheese until light and fluffy. Add sweetened condensed milk and blend thoroughly. Stir in lemon juice and vanilla. Pour into prepared crust. Chill 3 hours or until set. Top with 1 can instant cherry pie filling (or filling of your choice).
