Cheesy Chicken and Rice

  • 1 lb. boneless chicken
  • 1-2 tsp. olive oil
  • 1 family size box Rice-a-roni
  • 4 1/2 cups water
  • 2 cans Campbell's Cheddar Cheese soup
  • 1 tsp. garlic powder
  • 1 cup Minute rice
  • 3 tsp. butter
  • 1 tsp. dried onion flakes
  • 6 slices Velvetta cheese


Brown chicken in olive oil and set aside. Combine rice-a-roni, vermicelli mix from rice-a-roni box, and butter in large deep skillet and cook until golden brown. While vermicelli mix and rice-a-roni is browning, combine water, rice-a-roni seasoning mix, cheese soup, garlic powder, and onion flakes in a bowl. When vermicelli and rice mix is browned, add chicken to skillet, and pour over rice-a-roni seasoning mix combination and add minute rice. Continue cooking for 20-30 minutes. Remove from heat and top with cheese slices. Allow to melt and serve.
