 Servings: 4-6 servings


  • 1/4 cup yellow onion chopped fine
  • 1 stalk of celery chopped fine
  • 1 medium carrot chopped fine
  • 2 T olive oil
  • 1 T butter
  • 1 lb lean ground beef
  • 1/3 lb ground pork
  • 2 tsp kosher salt
  • 1/2 cup dry red wine
  • 3 cups Pomodoro sauce


Chop onion, celery and carrots fine in a food processor.

In a large skillet, over medium heat, place olive oil and butter. When butter is melted, add vegetables and cook for 20 minutes until soft.

Add meat, breaking it up fine and stirring until meat is cooked and loses its raw color. Add salt and stir thoroughly. Make sure meat is completely broken down.

Drain meat. Return meat to pan over medium heat. Add wine. Let wine evaporate (about 5 minutes).

Add Pomodoro sauce. Cook, stirring frequently, about 15 minutes.
