Beth's Orzo Florentine

Beth's Orzo Florentine

 Prep Time: 5 minutes
 Cook Time: Cook orzo according to package instructions.
 Servings: 8-10 servings


  • 1lb cooked Orzo
  • 1/2 Red Onion
  • 1 Large Handful fresh basil
  • 1 Package fresh spinach
  • 1 1/2 cup walnuts or pinenuts
  • 8oz Feta Cheese crumbled
  • 1 T Chopped Garlic
  • 1/2 cup lemon juice
  • 1cup olive oil
  • salt and white pepper to taste


Cook orzo according to package instructions and allow to cool. Mix in onion, basil, spinach, nuts, cheese and garlic. Wisk together lemon juice, olive oil and salt and pepper to taste.
